Chicken Tortilla Soup


I've been wanting to try my hand at making a chicken tortilla soup for quite some time.  I gave it a go tonight!  I started with the recipe listed in my "For Tummies" tab and tweaked it a bit.  I really liked it.  The  Hubs wasn't so enthused.  Maybe y'all can give me some ideas to try for next time!  One thing - he is opposed to beans and opposed to most vegetables.

Chicken Tortilla Soup
(serves 3-4)

1 can cream of chicken soup
1 can chicken broth (I used homemade stock)
1/2 jar Pace salsa (choose the heat level you prefer)
1 cup water
1 cup frozen corn
2-3 chicken breasts (cooked and shredded or cubed)
sour cream to taste
cheese to taste (I used a Mexican blend)
corn tortilla chips

Mix cream of chicken soup, broth, salsa, water, corn, and chicken in soup pot.  Bring to boil then simmer for 15 - 30 minutes.  Add sour cream and stir until combined.  Pour into bowls and top with cheese.  Serve with tortilla chips.

What would you do differently?  It was quite flavorful and not too hot. I ate three bowls! The Hubs said it didn't taste much like the tortilla soups at restaurants.  Ideas?
